Greek Chicken Bowl

Need something quick for your meal prep this week? I got you! You can pile in all the veggies or keep it simple. Lots of ways to adjust this recipe for your needs!

INGREDIENTS:

  • 2 Lbs boneless, skinless, chicken breast

FOR THE MARINADE:

  • 2 Tbsp olive oil

  • 2 Tbsp lemon juice

  • 2 tsp smoked paprika

  • 2 tsp cumin

  • 2 cloves garlic

  • 1 tsp turmeric

  • 1 tsp ground coriander

  • 1 tsp kosher salt

  • 1/4 tsp freshly ground pepper

  • 1/4 tsp onion powder

  • 1/4 tsp ground cinnamon

  • 1/8 tsp crushed red pepper flakes

FOR THE TZATZIKI SAUCE

  • 1 cup 2% or FF Greek yogurt

  • 2 cloves minced garlic

  • 1/2 tsp dried dill

  • 2 tsp lemon juice

  • salt and freshly ground pepper to taste

  • 1/2 cup English cucumber diced very small

DIRECTIONS: WATCH THE VIDEO

  1. Place chicken in a bowl or bag and add marinade ingredients. Marinade for 1-3 hours.

  2. Grill chicken or cook chicken on stove until cooked through.

  3. While the chicken is cooking, make tzatziki sauce by combining cucumber, yogurt, garlic, dill, lemon juice and salt and pepper. Refrigerate if needed.

  4. Layer chicken with rice, cherry tomatoes, diced cucumber and red onion. Even pickled onion would be delicious!

  5. Top with Tzatziki sauce and serve!
