Protein Packed Farmers Market Salad
Fresh ingredients:
100g romaine or your choice lettuce
1 white nectarine (90g)
30g sliced strawberries
1/4 cup (56g) of low fat cottage cheese
Handful of croutons (50g) I made my own using a Gluten Free Schar Baguette!
Fig balsamic vinaigrette
Cooked ingredients:
200g sweet potato sprayed with a little olive oil anda pinch of salt
Real Good Foods Chicken Strips (I used about 7oz)
Instructions:
Put the sweet potatoes and chicken strips in a pre-heated air fryer at 350°f/175°c for 10 minutes, then turn up the temperature to 400°f/205°c for 2 minutes.
While everything is cooking prepare fresh ingredients
Add the cooked ingredients to the fresh ingredients and bam, a delicious nutrient-dense protein packed salad!!!
