Protein Packed Farmers Market Salad

Fresh ingredients:

  • 100g romaine or your choice lettuce

  • 1 white nectarine (90g)

  • 30g sliced strawberries

  • 1/4 cup (56g) of low fat cottage cheese

  • Handful of croutons (50g) I made my own using a Gluten Free Schar Baguette!

  • Fig balsamic vinaigrette

Cooked ingredients:

  • 200g sweet potato sprayed with a little olive oil anda pinch of salt

  • Real Good Foods Chicken Strips (I used about 7oz)

Instructions:

  • Put the sweet potatoes and chicken strips in a pre-heated air fryer at 350°f/175°c for 10 minutes, then turn up the temperature to 400°f/205°c for 2 minutes.

  • While everything is cooking prepare fresh ingredients

  • Add the cooked ingredients to the fresh ingredients and bam, a delicious nutrient-dense protein packed salad!!!
