Easy High Protein Chicken & Pasta Cucumber Ranch Salad
I am low-key convinced that people who don’t like salads make boring salads 🤣
So can we stop doing that?? (Unless you enjoy boring salads then you do you boo, boo!)
My philosophy is there are no rules with salad!! If you enjoy it together, put it in there! Salads don’t need to be iceberg lettuce, cabbage and unripe tomatoes if you don’t want them to be. You are the master of your salad so go forth Padawan and make salads the way YOU want to make them.
This salad is PACKED with some of my favorite items and full of flavor but not just that it has over 50g of protein and a huge punch of potassium!
Base: Romaine & mixed baby greens
Dressing: Bolthouse Cucumber Ranch
Toppings:
2 servings of Real Good Foods Chicken Strips
100g Cherry tomatoes
50g Thinly sliced carrots
120g Diced nectarine
100g of some of my prepped pasta (3:4 ratio of legume pasta & brown rice pasta)
And 1/2 serving (13g) of Trader Joe’s Spicy Chakri Mix for some crunch!
Mix it all up and enjoy!
