Chili Lime Shrimp
Here’s what you’ll need:
1 lb peeled shrimp
1 tsp chili powder
1 tsp honey
1 tsp soy sauce
1 cloves garlic (minced)
1 fresh squeezed lime
Putting it all together:
Time to create the tastiest damn shrimp you’ve ever had! Mix together the chili powder, honey, soy sauce, garlic and lime in a bowl. Throw that shrimp in there, coat it well, and let sit in the fridge while you prepare your pineapple salsa!
Pineapple Salsa
Here’s what you’ll need:
1 medium jalapeños (seeded and diced)
20 oz can crushed pineapple
1/2 small red onion (diced)
1 fresh squeezed lime
1 tsp salt
1/4 bunch cilantro
Putting it all together:
Drain your can of crushed pineapple (you could use fresh if you aren’t lazy like I am!). Combine all ingredients into a bowl and mix well. Adjust salt and cilantro to your liking!
Back to the shrimp: heat up a pan on med-high heat. Drizzle about a teaspoon of vegetable oil into the pan, then put the shrimp and sauce in the pan. Shrimp cooks quickly so wait until it’s curled up slightly and is no longer translucent, then remove from pan. Continue cooking the remaining sauce for about five minutes until thickened, and then pour over the shrimp!
Combine with some rice, black beans & avocado and you’re ready to go!
