Burrito Bowl with Chicken & Rice

For the chicken and rice I used my Instant Pot however, you could absolutely use a Dutch Oven or something similar if you don’t have an Instant Pot. This is a nice and big bulk recipe, great for some food prep for the week or a big family meal! 

INGREDIENTS

  • 4-5 large chicken breasts (I used an entire bag of Trader Joe’s frozen chicken breasts defrosted, their bags are 40oz in total)

  • 2 cups of uncooked rice (I used basmati) 

  • 1/2 a large white or yellow onion diced

  • 2 cups chicken broth (I prefer one that is low sodium and that has minimal ingredients)

  • 1 cup Trader Joe’s pepita salsa or another red salsa mixed with 1 cup of water

  • 1 teaspoon-tablespoon of minced garlic

  • 2-3 bay leaves (keep whole so you can pick them out later)

  • Onion powder to taste

  • Smoked paprika to taste

  • Dried Italian herb blend to taste

  • Salt & pepper to taste

  • Fat of choice (oil, butter, ghee)

INSTRUCTIONS

  • In a small bowl stir together all the dried spices (minus the bay leaves) and rub your chicken down, coating it all over in the spice mixture. 

  • Set your Instant Pot to sauté and add your chosen fat to the inner pot, then brown your chicken breasts, 1-2 minutes on each side. After you brown them transfer them to a plate. 

  • Add a little more fat to the pot, toss in your diced onion and minced garlic, sauté until translucent.

  • Add your rice along with all the liquid and any remaining spices, stir it up so it is nice and mixed then add your bay leaves.

  • Add in your steamer basket with the handles up and place the chicken breasts on the rack above the rice. Totally fine if you don’t have a steamer basket, it just helps keep things organized during the cooking process. 

  • Seal the vent, set to high pressure, pressure  for 10 minutes then quick release. 

  • Remove chicken breasts and shred those babies up, fluff up rice and mix it all together (or leave it separate if you like it that way). 

Pro tip if you are tracking macros, an easy way to do it is to know how much your inner pot weighs and weigh out the entire pot once it’s done cooking, then subtract the weight of your pot. That is the total weight of your recipe to use so 1g = 1 serving in your recipe. 

Now for the burrrrrito bowl!! 

Use the chicken and rice as your base, then I personally recommend topping your bowl with some black beans, sweet yellow corn, chopped cilantro, Trader Joe’s Island salsa, Trader Joe’s pimento cheese dip, Trader Joe’s Queso, and Trader Joe’s Yellow Corn chips! Can you tell I love Trader Joe’s? 

If you don’t have a Trader Joe’s in your area, no problem at all, simply use your favorites from your favorite store!
