Easy Salmon Sliders

What’s for lunch? How about some easy salmon sliders that even your toddler could put together!

INGREDIENTS:

  • 1 salmon patty of your choice

  • 2 hashbrowns patties (one is just fine if you want to cut down on some carbs and fat)

  • Broccoli slaw

  • Brioche or other-kind of slider buns, I used Ener-G Gluten-Free Dinner Rolls

  • Mustard & BBQ sauce as desired

INSTRUCTIONS:

For the assembly, I spread BBQ and creamy yellow mustard on both the bottom & top buns, added some broccoli slaw for health, broke my grilled salmon patty into quarters, fit two quarters on each bottom bun, split hashbrowns in half, and layered. I omitted cheese for these because I didn't feel like they needed it but you could absolutely add some, I think they'd pair great with some Havarti or Vermont Cheddar. For my carbs source on the side, I chose quinoa but they'd also go great with sweet potato fries or roasted veggies.
