Protein-Packed Paella Recipe

Looking to load up on protein and carbs for that training day but don't have much wiggle room in fats? This paella recipe is great for those who need a high-protein and high-carb meal.

⁠INGREDIENTS:

  • 1lb Italian hot sausage chopped⁠

  • 1lb chicken breasts cut into cubes⁠

  • 19oz frozen uncooked shrimp with tails removed⁠

  • 4 cloves garlic diced⁠

  • 1 large onion chopped

  • 4 medium tomatoes chopped

  • 4-5 poblano peppers chopped⁠

  • 1 c arborio rice⁠

  • 1.5 c water⁠

  • 1 pinch saffron⁠

  • 1 tbsp oregano⁠

  • 1 tbsp basil⁠

  • 1 tbsp salt⁠

  • 1 tbsp paprika⁠

  • 1 tsp cajun spices⁠

  • 1 tsp celery salt⁠

  • 1 tbsp olive oil⁠


INSTRUCTIONS:

  1. Heat olive oil in a large pan. Brown onions and garlic on medium-low.

  2. Add hot sausage to the pan for approx 3 minutes to lightly cook.

  3. Remove sausage from pan and chop.

  4. Add tomatoes and peppers to pan over medium-high heat.

  5. Add rice and water. Add spices. Add sausage and chicken to the pan and simmer on medium-low heat for approx 15-20 minutes until rice is cooked.

  6. When rice and meat are fully cooked, add shrimp for the last 2-3 minutes to cook.

  7. Cool and serve. Or, package up for lunches for the week!

Makes approximately 6 large servings or 8 medium servings.
