Thai-Inspired Peanut Chicken Wraps

Need a quick, high-protein lunch idea for busy weeks? Coach Maggie has you covered with these Thai-inspired peanut chicken wraps. They’re easy to prep, full of flavor, and perfect for assembling on the fly so nothing gets soggy. Bonus: you can totally use a store-bought peanut sauce if you’re short on time.

Ingredients:

  • 1 lb Rotisserie chicken breast, chopped

  • 3 cups slaw mix

  • 1 cup matchstick carrots

  • 1/3 cup chopped roasted, unsalted peanuts

  • 1/4 cup cilantro, chopped

  • 30 grams creamy peanut butter

  • 1/8 cup olive oil

  • 1/2 Tbsp soy sauce or alternative

  • 42 grams honey

  • 1/2 tsp sesame oil

  • 1/2 Tbsp rice wine vinegar

  • 1 Tbsp minced ginger

  • 1 clove minced garlic

  • salt, pepper and red chili flakes to taste

  • 6 large tortillas

Instructions:

  • Combine slaw mix, carrots, peanuts and cilantro. Set aside.

  • Mix together sauce ingredients and pour over slaw mixture. Use premade sauce if in a pinch.

  • Place tortilla down, add 1/6 of chicken and then weigh out 1/6th of slaw mixture.

  • Wrap tortilla, cut and enjoy.

  • Save ingredients separate for the week and assemble when you need it so it isn’t soggy!
