Instant Pot Lentil Mujaddara Recipe
Mujaddara is generally made using brown or green lentils and rice, that can be seasoned with cumin, coriander, or mint. Lentils are a great vegetarian source of protein.
INGREDIENTS:
1 cup brown lentils
1 cup jasmine rice
3 cups water
1 tbsp olive oil
2-3 shallots, sliced
4 cloves garlic, chopped
2 tsp cumin
1 tsp coriander
1 tsp allspice
1 tsp cinnamon
1 tsp turmeric
1 tsp ground ginger
2 tsp salt
Juice of 1 lemon
¼ c white cooking wine
INSTRUCTIONS:
Place 1 c rice and 2 c water in the instant pot and pressure cook on high for 15 minutes. Manual release, remove, and set aside to cool. Clean out your instant pot and set to saute mode. Add olive oil, shallots, and garlic and saute for 5 minutes. Add the white cooking wine and lemon juice to deglaze the pot after 5 minutes. Add all of your spices and the dried lentils. Add the remaining water, cover, and set to high pressure for 15 minutes. Natural release and then stir in your rice.
